2 ingredient pancakes

Ingredients

  • 1 egg to every 1 banana

  •    For example: For 4ppl that’s 4 eggs and 4 bananas.

    Optional Extras:

  • 1 tsp vanilla powder or extract

  • 2-3 tbsp almond meal or buckwheat flour

  • 1 tsp cacao

Method


In a bowl: Mash banana/s well and then whisk in egg/s. Add optional extras and mix together. Then add spoonfuls of the batter to a lightly oiled fry pan and cook for 1-2 minutes on each side until golden brown.

In a food processor: (makes a smoother consistency). Mash the banana/s slightly and then add all ingredients to a food processor and whizz. Then add spoonfuls of the batter to a lightly oiled fry pan and cook for 1-2 minutes on each side until golden brown.

 I love to serve with fresh berries and a drizzle of raw honey.
