High protein ricotta pancakes

INGREDIENTS
· ½, banana, mashed
· 2 free range eggs
· ¼ ( 30g ) cup almond meal
· ¼ (70g) ricotta
· 1/8 teaspoon baking powder
· 1 ( 5g ) teaspoon hemp seeds
· ½ teaspoon ground cinnamon
· ½ teaspoon Psyllium Husk
· 1 (15g ) tablespoon maple syrup (optional)
METHOD
1. Peel and mash the banana until smooth in a medium sized bowl.
2. Add ricotta and eggs and whisk with fork until combined
3. Add seeds, almond meal, psyllium husk, baking powder and cinnamon to the egg mixture
4. NOTE: if you have a Thermomix, food processor or high speed blender – add all ingredients and whizz for 1 minute for a smoother consistency.
5. Lightly oil a fry pan and heat on medium heat
6. Cook pancakes, 1 minutes on each side re oiling the pan as you go
