High protein Silken Tofu Chocolate Mousse

What’s not to love?

A hit of protein along with the beneficial phytoestrogens found in tofu, which are beneficial during perimenopause - all wrapped up into a delicious, mouthwatering mousse. This is one of my go-to’s for getting more tofu in my diet. Preparing a conventional mousse recipe can be a bit of a faff. From beating cream to stiff peaks, to making sure the chocolate isn’t too hot that it cooks the egg yolks. There is a lot that can go wrong in the process. This tofu chocolate mousse is easy and fool proof.

Serves: 4

INGREDIENTS

  • 1 packet of organic silken tofu (approx. 450g)

  • 150g Dark chocolate of your choice

  • 2-3 tbsp maple syrup or to taste

  • An optional pinch of salt


METHOD

  1. Break up the chocolate into a heat-proof bowl and melt in the microwave, or over a pot of water that has been boiled, stirring every few seconds to make sure the chocolate doesn’t burn.

  2. To a food processor, add the tofu, melted chocolate, maple syrup and an optional pinch of salt. Blend until smooth. 

  3. Transfer into serving glasses or ramekins and serve!

  4. I topped mine with fresh seasonal berries, but you can top yours with whatever you want!
