Mango lassi breakfast parfait

Loads of people still struggle with having a wholesome breakfast to start the day right. This is definitely in my top 3 breakfast for so many reasons! It’s super easy to make, can be prepped up to 3 days in advance, is loaded with fibre to manage weight and cholesterol levels, is a great source of protein and the spices add ridiculously good flavour as well as antioxidants and help lower inflammation.

Ingredients

  • 1 tsp ground cardamom (or take seeds out of about 4 pods)

  • 1 tbsp flaxseeds

  • 1/2 tsp cinnamon

  • 1 tsp ground turmeric

  • Small knob of fresh ginger to taste

  • 1 tbsp natural peanut butter

  • 200g organic oats

  • 300mL your choice of milk

  • 2 tbsp Greek yoghurt

  • 1 fresh lime

  • 1 small banana

  • 200g frozen mango

  • 1 tbsp desiccated coconut

  • Handful pistachios

  • 1/2 tsp fennel seeds

Method

  1. Add cardamom, flaxseeds, turmeric, cinnamon, ginger, peanut butter and half he oats in a food processor and pulse.

  2. Add milk, yoghurt, lime juice, banana, frozen mango and blitz everything.

  3. Pour into a bowl and add remaining oats and coconut.

  4. Divide into approx 4 jars or transportable containers for breakfast on the go!

  5. Toast the pistachios and fennel seeds and sprinkle on top

Keeps in the fridge for 2-3 days.
