Mango lassi breakfast parfait

Loads of people still struggle with having a wholesome breakfast to start the day right. This is definitely in my top 3 breakfast for so many reasons! It’s super easy to make, can be prepped up to 3 days in advance, is loaded with fibre to manage weight and cholesterol levels, is a great source of protein and the spices add ridiculously good flavour as well as antioxidants and help lower inflammation.
Ingredients
1 tsp ground cardamom (or take seeds out of about 4 pods)
1 tbsp flaxseeds
1/2 tsp cinnamon
1 tsp ground turmeric
Small knob of fresh ginger to taste
1 tbsp natural peanut butter
200g organic oats
300mL your choice of milk
2 tbsp Greek yoghurt
1 fresh lime
1 small banana
200g frozen mango
1 tbsp desiccated coconut
Handful pistachios
1/2 tsp fennel seeds
Method
Add cardamom, flaxseeds, turmeric, cinnamon, ginger, peanut butter and half he oats in a food processor and pulse.
Add milk, yoghurt, lime juice, banana, frozen mango and blitz everything.
Pour into a bowl and add remaining oats and coconut.
Divide into approx 4 jars or transportable containers for breakfast on the go!
Toast the pistachios and fennel seeds and sprinkle on top
Keeps in the fridge for 2-3 days.
