My favourite tabouleh salad

Serves: 4 Preparation: 20 mins

I just love this salad. Full of nutrient rich parsley, and antioxidant rich pomegranate. The quinoa adds extra fibre and protein. This salad is amazing paired with a piece of grilled fish, adds perfectly to a lunch wrap or whilst entertaining with a barbeque. It also keeps really well overnight so making double so you have leftovers the next day is recommended!  

Ingredients

2 bunches of fresh parsley chopped
Couple of tomatoes diced or punnet of cherry tomatoes
1-2 cucumbers diced
2-4 shallots sliced thinly
Approx. 1 cup of cooked quinoa

Lots of lovely pomegranate jewels
Dress with lots of lemon juice and extra virgin olive oil and salt and pepper

Mix and serve!
