Parmesan seedy crackers

Serves approx. 6-8 ppl

These delicious flaxseed and parmesan crackers are the perfect snack to give you that little protein boost throughout the day. They also provide you with extra healthy fats in your diet

Why protein and healthy fats? The combination of these two macronutrients helps to support stable blood sugar levels throughout the day. Stable blood sugar levels are vital for the healthy production of your reproductive hormones including progesterone and estrogen.

Ingredients

·       250g mixed ground seeds*

·       Extra Sesame Seeds for sprinkling on top

·       50g freshly grated Parmesan cheese

·       Big pinch sea salt flakes

·       50ml extra virgin olive oil

·       5-6 tablespoons water

*My favourite mix includes flaxseeds, chia seeds, sesame seeds and sunflower seeds.

Method

1. Preheat your oven to 180 degrees

2. Grind your seeds first by putting them into a food processor, Thermomix or grinder. Blitz until they form a flour-like texture.


3. Add a big pinch of salt, the oil, cheese and water and blend until a ball of pastry-like dough is formed. 



4. Tip this onto the benchtop in between 2 large pieces of baking paper and roll out until approx. 5mm thick. 



5. Sprinkle with extra sesame seeds over the top of the rolled dough


6. Then using a round cookie cutter (the dough can be quite delicate so take care) – cut out the crackers and lay on a lined baking tray 



7️. Bake for 15 minutes and allow to cool completely before moving. 


Top tip: These are great eaten as a snack or on the side of some home made soup or dip.
